Fava beans korokke

Few days ago I was looking for good potato recipes on wikipedia and I found a super big list of foods from all over the world based on them.

A big list that don’t include korokke!!!

I ate them just once in a little bento house in Milan and since that day I wanted to make them at home. When I saw that list I remembered their existence and I decided that the time to cook korokke was arrived for me too.

But…yes, there’s a but…I am vegetarian since february of this year and korokke have meat, so I decided to prepare them with fava beans, cultivated with big love by my future husband’s father in his vegetable garden.

After all fava beans and all beans are my special meat now.

The recipe is super easy and makes about 13 korokke.

I eat them with a sauce I found in this forum www.bbq4all.it/portal/forum , an italian forum about barbecue…No, I’m not kidding, I’m vegetarian and I read posts of a barbecue centred forum…Big shame on me, It’s a wonderful source of sauce recipes, I have to admit that…And I’m just so curious…and..no, stop…let speak about korokke…

Korokke

-500 g potatoes

-1/2 onion

-3 tbsp of fava beans ( I used them without skin)

-15 g butter

-2 tbsp extra virgin olive oil

-salt and nutmeg

-1 egg

-2 tbsp all-purpose flour

-2 tbsp water

-panko

-oil for fry

Boil the potatoes cut in big chunks without skin in hot water until tender, then mash them and cook without oil in a pan just to let evaporate the most part of the moisture. Put aside.

Stir-fry the onion chopped with the evo oil and cook until translucent, then add fava beans and cook for about 3 minutes.

Mix onion, fava beans and potatoes. Adjust salt according to your taste and add a pinch of nutmeg.

Spread the mixture on a plate to let it cool down to room temperature.

When it’s cool make about 13 balls and flatten them.

Mix the egg, the water and the flour and beat well to avoid lumps.

Coat each korokkè with flour.

Dip them in the egg mixture then coat with panko.

Fry until golden and crispy.

Sauce

- 5 tbsp sweet soy sauce

-4 tbsp balsamic vinegar

-4 tbsp honey

-1 tsp brown sugar

-1 tsp sweet paprika

-a pinch of chili pepper

-2 tbsp pf brandy

-1 tsp all-purpose flour

Mix everything and cook until the sauce thickens.
